By 3D surface, do you mean plotting a function of 2 variables, e.g. z = f(x,y), or an arbitrary surface defined by a system of equations?

I have a x and y axes defining an unevenly spaced grid and a z value at each point.  Is is similar to a height-map but not evenly spaced.
